Ashley Acornley
Katherine Andrew, MPH, RD
Katherine Andrew serves as the Director of Nutrition, Farms & Gardens for the Inter-Faith Food Shuttle (IFFS), a non-traditional food bank serving 7 counties in central North Carolina. Katherine helped develop and now manages 6 inner-city community gardens, a teaching and production farm, and the Food Shuttle’s cooking-based nutrition education program, Operation Frontline. Katherine also runs the IFFS Plant a Row for the Hungry program, trains volunteer instructors, teaches nutrition to the Food Shuttle’s Culinary Job Training Program interns, and conducts nutrition and cooking activities for many of the Food Shuttle’s 200+ food assistance agencies and partner organizations. Katherine received her bachelor’s degree from the University of Virginia and her Masters of Public Health in Nutrition from the University of North Carolina. Currently she serves as the Food Security Chair for the North Carolina Dietetic Association as well as the Raleigh Dietetic Association, is the Community Garden co-chair of Wake County’s Advocates for Health in Action, and is on the board of several health initiatives in North Carolina, including the North Carolina Sustainable Food System Coalition, North Carolina Fruits and Veggies Nutrition Coalition Steering Committee, and North Carolina's Community Gardening Initiative.
Ashley Beasley
Ashley Beasley received a B.S. degree in biological sciences with a nutrition concentration from North Carolina State University. She is currently pursuing a M.S. degree in nutrition at Meredith College where she is also an active member of the Meredith Nutrition and Wellness Association. An aspiring dietician, Ashley enjoys teaching Operation Frontline classes through the Inter-Faith Food Shuttle, volunteering at Rex Healthcare Wellness Centers and Hospitals, and delivering Meals on Wheels. A new member to the Raleigh District Dietetic Association, Ashley looks forward to increasing student involvement and learning from Association members.
Jessica Bridgman, MPH, RD
Jessica received her BS from North Carolina State University and her MPH from the University of Michigan, Ann Arbor. She relocated to New York City to complete her dietetic internship at NewYork-Presbyterian Hospital, The University Hospitals of Cornell and Columbia. For the past three years she has worked on a multi-faceted national research study at the University of North Carolina at Chapel Hill, during which her passion for conducting public health research has increased tremendously. The HEALTHY Study has aimed to reduce the risk of type 2 diabetes and overweight in middle school aged children. Jessica has also earned her Certificate of Training in Adult Weight Management and her Certificate of Training in Childhood and Adolescent Weight Management. Her interests include running, yoga, frequent travel abroad, making jewelry and vegetable gardening. She also spends a lot of time on home remodeling projects with her husband Dave. Additional community service involvement includes Girls on the Run and SuNica. She is very excited about serving RDDA members in the upcoming year.
Ashley Bryan, RD, LDN
Ashley is a clinical dietitian for long term care facilities in the greater Raleigh area. Prior to working in long term care, Ashley was a clinical dietitian for Cape Fear Valley Hospital in Fayetteville. Ashley received her B.S. degree in biology, with a concentration in nutrition, from North Carolina State University. She completed the dietetic internship at Meredith College. Ashley is serving on the board for Raleigh District Dietetic Association as membership chair.
Krisha DeCoursey
MeBette Eckhardt, MA, RD, LDN
MeBette earned a Bachelor of Science from East Carolina University in Food and Nutrition in 2001. She completed a dietetic internship combined program with a Master's in Family and Consumer Science at Appalachian State University in 2004. She has been employed by The Wake County WIC Program, Dorothea Dix Hospital and Central Regional Hospital, where she is currently a Clinical Dietitian.
MeBette is interested in the dietitian's role in legislative affairs and is looking to increase awareness of the need for dietetics professionals to remain an active participant in the passing of bills which affect the health and well being of North Carolinians.
Julie Francis, MS, RD, LDN
Julie graduated with her MS in Nutrition from the University of North Carolina at Greensboro. She currently works as a Worksite Wellness Specialist for the Physical Activity and Nutrition Branch of the NC Division of Public Health.
Outside of the workplace, Julie takes an active role in her field, as a member of the American Dietetic Association, the Secretary for the North Carolina Dietetic Association, and the 5K Coordinator for the Raleigh District Dietetic Association. She was also awarded a Certificate of Training in Adult Weight Management in 2007. Julie is a fan of continuing education, and is now pursuing further education in the culinary field to broaden her nutrition knowledge.
Julie enjoys spending her free time with her husband, Paul, and their families, as well as running, swimming, cycling, cooking, baking, and dining out.
Maryam Funmilayo
Maryam Funmilayo received her Bachelor of Science degree in Human Nutrition from Kansas State University, where she majored in Public Health Nutrition. She is currently working towards her MS degree in Nutrition at Meredith College.
She is a member of the Muslims in Dietetics and Nutrition (MIDAN) group, which is the seventh interest group member of the ADA. She currently serves on the MIDAN’s Ramadan Nutrition Research Taskforce, Student Member Advisory Committee, and the Newsletter Committee.
Maryam is an active member and volunteer of the Women’s committee in her local Muslim community in Raleigh. She participates in the community’s annual health and nutrition conference. This past June, she participated in the nutrition conference held at the Islamic Center of Raleigh, and spoke to the women about etiquettes of eating and drinking. She really enjoys educating the women and girls about healthy living; and encourages them to consider dietetics as a career.
Maryam is also a published freelance writer. Her articles on public health, nutrition, education, family life, personal reflection, and women’s issues have been published in both print and online magazines and newsletters.
Her hobbies include reading, writing, attending aerobics and karate lessons, and spending quality time with her husband and four little kids. Her academic interests are in global public health, specifically maternal and child health, and holistic nutrition.
This is Maryam’s first year serving with the RDDA board. She will be serving as the Communications Apprentice.
Carson Garoni
Carson earned a Bachelor of Science from The University of North Florida in Health and Nutrition. She started her MS in Nutrition at Meredith College a year ago and is currently gaining her supervised practice in the dietetic internship at Meredith. She plans to complete her Masters of Science in Nutrition immediately following the internship.
Carson’s love of art and design lead her in a different direction for a while. For ten years she had her own business as an artist and residential and commercial design consultant. Her decision to go back to school to become an RD emerged from her passion for nutrition and health along with her desire to help others. To enhance her academic experience Carson is an active member of the American Dietetic Association, the North Carolina Dietetic Association, and the Raleigh District Dietetic Association. She also dedicates herself to volunteering in the field, and earning certifications related to the profession. She has earned a ServSafe certification and a certificate in Childhood & Adolescent Weight Management through the American Dietetics Association and Commission on Dietetics Registration.
Carson enjoys the outdoors, running, mountain biking, cooking, gardening, reading, writing, painting, drawing, and spending time with friends and family.
Lindsay Hecht, MS, RD
Lindsay received her BSPH in Nutrition from UNC-Chapel Hill and her MS in Nutrition from and Internship at UNC-Greensboro. She has served in the past as president-elect and membership chair for RDDA. She currently works as a School Nutrition Associate at NCSU on the STEPS to Health SNAP-Ed grant. She has her Certificate of Training in Childhood and Adolescent Weight Management. Lindsay currently volunteers at a free medical clinic in Durham, serving homeless and drug rehab patients. She is an avid Tarheel fan since she was born and bred in NC.
Rebecca Houseal, MS, RD
Rebecca is a graduate of Meredith College with a Master of Science in Nutrition. She also holds a BS degree in Nutrition and Dietetics from Western Carolina University. She currently works as a dietitian at The Institute of Lifestyle and Weight Management, and as a WIC program nutritionist for Wake Co. DHS. This is Rebecca’s first year serving with the RDDA board. She will be serving as the Marketing Apprentice.
Erin Johnson, MPH, RD, LDN, CNSC
Erin is a clinical dietitian working at Cape Fear Valley Medical Center in Fayetteville, NC. She graduated in 2003 with a B.S. in Biochemistry and a B.S. in Food Science from NC State University, and received her Masters of Public Health in Nutrition from the University of North Carolina in 2006. This is her second year serving as liaison for the Fayetteville Extension of the Raleigh District Dietetic Association.
Phyllis Kennel, MS, RD
Phyllis is the senior project manager for the Center for Genomic Sciences Unit at Duke University for the last year. Prior to that she managed a research study called HEALTHY, A Middle School Program for Prevention of Diabetes at University of North Carolina at Chapel Hill. Phyllis has also worked for Wake County Human Services in several positions as a Health Promotion Coordinator, WIC nutritionist and a school nutritionist. Phyllis received a B.S. degree in nutrition from the University of North Carolina at Greensboro and a M.S. degree in nutrition from the Virginia Polytechnic Institute and State University. She is an active member of the American Dietetic Association, the North Carolina Dietetic Association (serves on the marketing committee and member-at-large) and the Raleigh District Dietetic Association (President). Phyllis has also actively served on RDDA’s LFMF 5K race as sponsorship chair and Kid’s race chair.
Ellen L Morrison, MS, RD, LDN
Ellen has specialized in the treatment of eating disorders since 1994. She opened her private practice in Raleigh, NC in 1998. Ellen started her career at the Renfrew Center Florida and in 2006 was part of the initial staff at Carolina House where she developed a unique and effective nutrition program and was instrumental in setting the facility’s policies and procedures. Ellen is associated with IAEDP and has written the Core Nutrition Course for eating disorder certification. She has worked with the media in outreach, prevention and public awareness. Ellen has appeared as a discussion panelist with Susie Orbach, is a professional speaker on the topics of eating disorders and nutrition counseling and has taught college level nutrition. She is the Co-President of the NC Triangle Network of Eating Disorder Professionals, a member of SCAN, BHN and NE DPGs.
Jessica Oswald
Jessica received her BS from Western Carolina University. She has completed the dietetic internship at Meredith College and is currently finishing up her MS at Meredith College, as well. Jessica has worked as a Research Associate in the Nutrition-Epidemiology Department at the University of North Carolina. Jessica is currently serving as the Events Apprentice for the RDDA and this is her first year as a member of the RDDA board.
Anuradha Punjala, RD, LDN
Anuradha (Annie) is a Clinical Dietitian at Central Regional Hospital. Prior to becoming a Registered Dietitian she was a software programmer. Moved to North Carolina 5 years ago looking for a new interesting career, got hooked with new development in Food and Nutrition . Went back to college to completed internship from North Carolina Central University. She is a active member of American Dietetic Association, North Carolina Dietetic Association and Raleigh Dietetic Association. She also had poster presentation at NCDA ( 2007,2008,2009). Recently developed " Nutrition Trivia" game for RDDA. She is also involved in American Diabetic Association- Step Out.
Darlene Ray, RD, LDN
Darlene is a Clinical Dietitian at Rex Hospital. She has previously worked as a health educator for the Alice Aycock Poe Center for Health Education and as a WIC nutritionist for Piedmont Health. Darlene received a B.S. degree in nutrition from Meredith College. While a student at Meredith, she worked for North Carolina Cooperative Extension in the Expanded Food & Nutrition Education Program. Darlene is a member of the American Dietetic Association, the North Carolina Dietetic Association and the Raleigh District Dietetic Association.
Natalie Taft, RD, LDN
Natalie Taft is a registered and licensed dietitian who earned her Bachelor’s degree in biological sciences with a concentration in nutrition from North Carolina State University. She completed her Dietetic Internship through Meredith College and is currently pursuing a Master of Science degree from Meredith College, Raleigh, NC.
Dedicated to nutrition and healthy lifestyle education and promotion, Natalie serves as a Program Manager at the Alice Aycock Poe Center for Health Education, a statewide, non-profit health education center in Raleigh, NC. There she combines her knowledge of nutrition, curriculum development experience, and creativity to teach and inspire kids and adults alike. Natalie also works with Personalized Nutrition, Inc. where she conducts nutrition assessments and one-on-one nutrition counseling for patients and clients with a variety of health and nutrition-related needs. Natalie has earned a certificate of training in both Adult and Childhood & Adolescent Weight Management through the American Dietetic Association and Commission on Dietetics Registration.
Natalie is a member of the American Dietetic Association, an active member of the North Carolina Dietetic Association and its Marketing Committee, as well as serving as President-Elect of the Raleigh District Dietetic Association. Natalie enjoys spending time at the coast and can often be found out on the water with family and friends.
Nealie Tebb
Nealie is the Master of Nutrition Program Manager & Admissions Counselor at Meredith College. Prior to that she was a middle school Mathematics instructor and Gifted Education Coordinator for the Chapel Hill/Carrboro City Schools. Nealie received a B.S. degree in education from Saint Louis University, she is currently pursuing a M.S. degree in nutrition from Meredith College, and completing DPD coursework in anticipation of entering a Dietetic Internship in the fall of 2011. She is an active member of the American Dietetic Association, the North Carolina Dietetic Association (Marketing Committee Co-Chair) and the Raleigh District Dietetic Association (Nominating Committee Chair). Nealie has also actively served as 2009-2010 Committee Chair for RDDA’s LFMF 5K race and on the Film Feastival Committee from 2008-2010. Jessica Zombeck Marchand
Jessica is a Food Service Director and has worked for Aramark Healthcare for 3 1/2 years. She currently runs the Nutrition Department for Duke Raleigh Hospital. Jessica previously was the Food Service Director for Tanner Medical Center in Carrollton, GA. Prior to food service, she was a Clinical Dietitian for 5 years with the Carroll County Health Department in Carrollton, GA. Jessica completed her internship with the Georgia Division of Public Health and graduated from The University of Georgia with a Dietetics degree. Jessica currently resides in Raleigh, NC and has a new addition to her family, a rescue dog named Disco. Her hobbies include cooking, reading, traveling, and trying new restaurants.
